Distribution Partners
Website operators that license our ad serving technology pass information to us so that we may serve advertisements to you. The information passed may include, but is not limited to, your IP address, e-mail address, name, mailing address, telephone number, date of birth, and gender.

Offer Forms
We also collect information about you when you complete a survey or offer form on one of our websites or web pages. Publisher Partners

You may be familiar with the term "cookies," which are unique alphanumeric identifiers that store information on your computer. We allow third-party companies to serve ads and/or collect certain anonymous information when you visit our Web site. Pre-select/Pre-fill Offers

Stir-Fry: Black Pepper Beef and Cabbage Stir Fry

Oct 22, 2006 We used ground beef sirlion, beef broth instead of water, a pinch of salt, Lawry's seasoning salt, Accent seasoning, onions, sesame oil, and added a combination of red and yellow bell peppers. Along with Minute Rice cooked in the remaining beef broth, this meal took at least 10 minutes instead of the five minutes suggested, but a quick meal regardless and very tasty! My hubby said it tasted like a lettuce wrap from PF Chang's ^_^

Main Dish Casserole Recipes: Brown Rice and Black Bean Casserole

Jul 17, 2006 Very tasty...I'm already looking forward to having leftovers for lunch today! My husband really, really loved this. I liked it a lot as well, but would probably change up a few things in the future. First, it's called a brown rice casserole, but I didn't think there was nearly enough rice. I'd double the rice amount in the future. The carrot is also lost...not enough for flavor or even really color. I'd either added far more or omit entirely in the future. The swiss was good, but I think I'd like to try this with cheddar instead or in addition. Lastly, I think the chicken could be easily omitted to make this a vegetarian meal if so desired. This recipe is great as written, and I think it'll stand up to customization as well so I'm excited to try it again with my own spin. Thanks!

Slow Cooker Recipes: Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Sep 15, 2009 This was very good. I did make a few changes. My husband, a Chef, said you should use loin and not tenderloin. I used a loin roast and was perfect. I added cumin, coriander, a dark beer (fat tire, my favorite), and a spoon full of peanut butter. Sounds strange, but you only want enough fot the nutty flavor, helps bring out the flavors of the beans. Added hot sauce too. Severed over lime flavor chips, toped with black sour cream, cheese and black olives. To me, it was almost a gormet natchos not a chili, but the word chili is different in every place. I think I would take the lid off for an hour, to much liquid or add a little less broth, or even less beer, can always drink what you don't use, right.

After having my third baby last summer, I’m beginning to understand the desperation I sometimes hear from moms who want fast, easy meals. Because I love to cook, spending 15 minutes chopping vegetables isn’t a big deal to me, but it is if I have a baby crying at my feet (or strapped to my chest), and two other small children begging for snacks and/or tormenting each other. 

I can’t imagine what that’s like for someone who dislikes being in the kitchen. What a frightening thought.

For that reason, finding meals like this easy and fairly quick Butternut and Black Bean Enchilada Skillet really make my day. (And days down the road when I’m ready to pick up the phone and order pizza.) Let’s all give TK member Monique a great, big virtual hug for adding to our weeknight repertoire!

Here’s what you need: butternut squash, black beans, enchilada sauce, grated cheese, a jalapeno, some corn tortillas (I used a wheat-corn blend), an onion, cumin, chili powder, garlic cloves, and heat-safe oil (like coconut or grapeseed oil).

First, dice the onion.

Chop the garlic and half the jalapeno. (Save the rest for later!)

Pour the oil into a large, oven-proof skillet and bring to medium-high heat.

Throw in the chopped onion, garlic, and jalapeno.

Saute for 3-4 minutes until the onion becomes soft and translucent.

Add that gorgeous squash. You can find butternut squash pre-diced, which isn’t a bad idea, considering the manual labor it takes to peel and chop one.

Add the chili powder and cumin, as well as a few generous pinches of salt and black pepper.

At this point, you’re supposed to cook it for 8-10 minutes until the squash is fork-tender. I may have diced my squash too large because after 4-5 minutes, it was still rock-hard.

Here’s where some improvisation may be handy. If this also happens to you, add the enchilada sauce, cover the pan, and bring the temperature down to medium-low. Add a little water if too much evaporates. The squash will cook perfectly without sticking to the pan or burning before the center is cooked!

While the squash is simmering away, cut the tortillas into strips. I used a wheat-corn blend, which were slightly thicker than regular corn tortillas. I only used 6, but I will reduce the number even more when I make this again.

Add the tortillas and beans to the skillet. Oh, and most of the cheese!

Stir it up, and cook it for a couple more minute until the tortillas get softer and everything is combined well. Taste, and season with salt and pepper if necessary. Sprinkle the remaining cheese over top, and stick it under the broiler for a few minutes.

Sprinkle some freshly chopped cilantro on top, and dig in!

We loved this with homemade guacamole, sour cream, and some lime wedges. (Most things in my life can be improved with those three things…)

Put a spin on Mexican night with this healthy, vegetarian skillet dish. Ready in 30 minutes!

Heat olive oil over medium-high heat in a large oven-proof skillet. Add onions, garlic, and jalapeno and cook 2-3 minutes until onions become translucent and garlic is fragrant. Add cubed squash, cumin and chili powder and season with salt and pepper. Cook, stirring occasionally, until the squash is slightly tender, 8 to 10 minutes. You want the squash to be fork tender, but not so tender that it starts to fall apart and become mush.

Next add the black beans, corn tortilla pieces, and can of enchilada sauce and stir to combine. Reduce heat to medium-low and sprinkle in 1/2 cup of cheese. Stir again and simmer for a few minutes until everything is nice and melted.

Turn your oven broiler to high. Sprinkle an additional 1/2 cup of cheese over the top of the enchilada mixture and place in the oven under broiler for 3-5 minutes until cheese melts and tortilla edges become a bit golden brown. Remove from heat and serve immediately.

Serve with sour cream, cilantro, guacamole, or hot sauce!

Meatless Main Dishes: Barbeque Seitan and Black Bean Burritos

Jun 25, 2003 An exceptional recipe. Granted, a bit labor-intensive, unless you have a food processor (I don't), but I found it to be tastier than expected and easy to put together. A did make a few substitutions in the recipe, though. First, I substituted 3 jalepenos for the habanero (my area grocery stores don't even carry serranos) and tofu for seitan (again, my store didn't have it). Second, I used a spicy BBQ sauce -- same amount, just a bit more kick to it. The end result was quite spicy, which is the way I like it, so be careful. :)

Tacos, Burritos, and Enchiladas: Delicious Black Bean Burritos

Apr 16, 2003 This recipe is basically very good, but I only give it 3 stars because I had to change it for my taste. I didn't have the jalapenos so I skipped those. I really don't like cilantro so I left that out. I minced FRESH garlic myself for this recipe, and added chili powder as another reviewer suggested. The black bean, cream cheese, onion and pepper mixture was very attractive and appetizing, but I found it needed quite a bit more salt than called for. I added a little rice to each burrito, to make it more filling, and put a few teaspoons of medium chunky salsa in each as well. I doubled everything in the recipe and made six burritos to freeze for my husband's lunches. With the addition of the rice it would have stretched to about 10 burritos, but I followed another reviewers advice and saved some of the bean mixture for a dip.

It’s January! Meaning as pretty as it may look on a sunny winter day here in Northern California, as soon as I step outside I want to turn around and head back in, where it is still toasty warm. Days like these are perfect for cooking a big pot of chili beans, don’t you think? The basis for this turkey chili recipe comes from my friend Kelsey’s mom Janeen. It’s one of their family favorites. It uses naturally lean ground turkey, plenty of black beans, onions, carrots, and red bell peppers, and can be made in one big pot. I’ve dressed the original up a little with a bit more seasonings. It’s great over rice, or with tortillas, and tastes even better the next day when the flavors have had more time to blend. Enjoy!

This recipe produces a mildly spicy chili. You can easily add more chili powder or some cayenne to intensify the spice level if you wish. You can also add chipotle chili powder or chipotle Tabasco to give a smoky note to the chili. As for the red bell peppers, Trader Joe's has frozen sliced bell peppers that work well for this dish.

3 Tbsp olive oil1 medium onion, chopped (about 1 cup)1 carrot, chopped (about 1/2 cup)2 to 3 red bell peppers, chopped (about 2 cups)Salt2 cloves garlic, minced (about 2 teaspoons)2 Tbsp chili powder (more to taste)1 teaspoon ground cumin1 pound ground turkey (I use ground turkey thighs for more flavor)3 cups chicken stock1 teaspoon dried oregano1 bay leaf1 Tbsp tomato paste1 Tbsp cider or white vinegar2 15-ounce cans black beans, drainedFreshly ground black pepper

1 Heat the oil in a large, thick bottomed pot (6 to 8 quart) on medium heat. Add the chopped onion, carrot, and bell peppers, sprinkle with salt and cook until softened, about 6-8 minutes.

2 Add the minced garlic, chili powder, and cumin and cook for a minute more. Add the ground turkey and break it up with a wooden spoon.  Increase the heat to medium high. Stir and cook until the turkey is no longer pink.

3 Add the chicken stock, oregano, bay leaf, vinegar, and tomato paste. Use a straight edge spatula or wooden spoon to scrape up any browned bits from the bottom of the pan. Add the black beans. Bring to a boil, lower to a simmer, and cook, covered for half an hour, and uncovered for another half hour, or until the the liquid thickens. Remove bay leaf.

Adjust seasonings, adding salt and pepper to taste.

Serve with rice or heated corn tortillas.

Yield: Serves 6.
