White Chocolate Peanut Butter Cookie Clusters

Sometimes no-bake cookies feel like cheating.

And if that’s how you look at it, I’m very happy to be called a cheater.

With the warmer weather approaching, I wanted something sweet that didn’t involve turning on the oven.

Additionally, I wanted something supremely easy and not at all fussy. These ridiculously easy little clusters fit the bill and are a 10 minute project.

They combine two of my favorite ingredients, white chocolate and peanut butter. When melted together, they make the most amazing sauce. Anything that’s coated with it automatically becomes phenomenal.

Both White Chocolate Buttery Waffles Snack Mix and White Chocolate Vanilla Peanut Butter Puppy Chow use melted white chocolate and peanut butter, and since I love those, I knew the clusters would be a win.

I used peanuts in them, which is usual for me. I love handfuls of peanuts on their own, and of course I love peanut butter, but usually am not fond of peanuts in desserts.They tend to be like hard rocks embedded in soft cookies.

However, here the peanuts add so much crunch, texture, and flavor. I love them.

While peanuts add a hearty crunch, Rice Krispies add lighter, softer crispiness and texture.

They act like little sponges in any kind of batter or recipe you don’t want to use flour in yet need something to take the edge off the sog-factor, such as in Peanut Butter Chocolate Chip Granola Bars or in Healthy Oatmeal Chocolate Chip Miracle Cookies,  They’re the perfect solution.

The nuts and cereal are balanced by soft, squishy, puffy marshmallows. I love using marshmallows in bars because their fluffiness is a wonderful contrast to the crispier and crunchier nuts and cereal. Biting into a soft marshmallow coated in white chocolate and peanut butter is how I want to eat all marshmallows forever.

If you wanted to work in chopped pretzels, raisins, popcorn, diced peanut butter cups, other candy, or your general odd and ends, mix-and-match with what you have.

I loved these clusters and wish the pictures conveyed just how good they are, but they were exceedingly difficult to photograph. Lumpy, bumpy, light in color, shiny, small in size, and reflective. Fun times.

They’re one of those treats on the work-reward scale that is a 1 on work, 10 on reward. They remind of these pretzels for that reason. So easy, but exceedingly good, and addictive. Just one more.

They’re dense yet light, and the peanut butter-white chocolate has a melt-in-your mouth quality. They’re crispy and crunchy, yet soft and chewy.

The white chocolate is sweet, yet there’s hints of saltiness from the peanuts and peanut butter for a salty-and-sweet element. And unlike some treats where either white chocolate or peanut butter dominates, you get both loud and clear.

If no-bake is cheating, you can call me a cheater as much as you want.

Melted white chocolate and peanut butter coat a mixture of crispy rice cereal, peanuts, and marshmallows for fast and easy cookie clusters. They're sweet with a touch of saltines, with a melt-in-your mouth quality. They're dense yet light, crispy, crunchy, chewy, and very addictive. I give them a 1 on work, 10 on reward. I wish all cookie recipes delivered those results.

one 1-pound package (16 ounces) vanilla Caniquik, coarsely chopped (white almond bark or white chocolate chips may be substituted)
heaping 1/2 cup creamy peanut butter (do not use natural or homemade; use conventional Jif, Skippy, or similar)
1 cup Rice Krispies cereal or similar gluten-free crispy rice cereal (plus 1/4 cup cereal, only if necessary; see directions below*)
1 cup peanuts
1 cup miniature marshmallows

Prepare two baking sheets by lining them with parchment or wax paper; set aside.In a large microwave-safe bowl, combine Candiquik, peanut butter, and heat on high power for 1 minute to melt. Stop and stir. As necessary, heat in 15-second bursts until mixture can be stirred smooth. Be very careful not to overheat the mixture because white chocolate is notorious for scorching and seizing up.To the melted white chocolate-peanut butter mixture, add 1 cup cereal, peanuts, marshmallows, and stir to coat. Mixture will be runny and you want to keep it loose and not too cluttered with add-ins. But if your mixture is extremely runny and would benefit from extra bulk, add 1/4 cup cereal.* Adding a pinch of extra peanuts or marshmallows also works.Using a 2-tablespoon cookie scoop or with a spoon, drop mounds onto prepared baking sheets (I made 24). Allow cookies to firm up for about 2 hours at room temperature, or expedite by placing trays in the refrigerator or freezer is you have the space.Cookies will keep airtight at room temperature for at least 2 weeks, in the refrigerator for at least 1 month, or in the freezer for at least 6 months. Take care any ingredients used are appropriate for your dietary needs.

Pizza Recipes: White Pizza with Roasted Garlic and Green Olives

For those who prefer more sauce, a simple white sauce can be made sauteing flour in melted butter to make a roux, then adding a couple cups of broth and stirring until thickened. Flavor with garlic, herbs or anything (even dijon mustard!).

How to Temper White Chocolate

I won't try to sugarcoat it (until later that is); tempering white chocolate is by no means an easy process. Why should you bother? Well, tempering chocolate melts the chocolate to a specific temperature so the fat and sugar molecules collide. When the chocolate cools and hardens, it appears smooth and shiny and has a toothsome snap. Not all chocolates are created equal. We've covered how to temper dark chocolate, but here's the technique for tempering white chocolate, which requires a similar technique but different temperatures.

Tempering chocolate can be done at home in about two hours, but you'll need a candy thermometer and the proper couverture chocolate, which has a higher cocoa fat percentage and will melt and coat things easier. If there are any two rules to remember, do not get any water on the chocolate or else it will seize. First, you'll need to make a ganache, which is an emulsified mixture of heavy cream and white chocolate. When it cools, it will set into a cloudy, more malleable mixture.

The ganache is rolled into balls before it is dipped in the melted, tempered chocolate.

White Cheese and Chicken Lasagna

I’m a complete and utterly in love with all forms of lasagna. There’s just something about those layers of cheese, noodles and sauce that I can’t help but get weak in the knees over. So you probably can understand why I was instantly intrigued when I found Anna and Chelsea’s recipe for a White Cheese and Chicken Lasagna.

Chicken, cheese, spinach and as if there wasn’t already an abundance of cheese here, there’s also a white cheese sauce! I know! You might want to break open a bottle of wine, slip on some comfy pants because it’s about to get rich and cheesy up in here.

To make this lasagna happen, all you need is chicken (I used rotisserie chicken and it was fabulously easy), lasagna noodles, frozen spinach (thawed and squeezed dry), butter, milk, chicken broth, onion, garlic, flour, salt and pepper, dried oregano and basil, fresh parsley, ricotta, Parmesan and mozzarella cheese.

Start by bringing a large pot of water to a boil. Season it generously with sea salt and drop in the entire package of noodles. Even though you only need 9 noodles, sometimes they crack or split while they’re boiling, so I just make them all to be on the safe side. Cook the noodles for 8-10 minutes, then drain and rinse with cold water.

Next get some prep out of the way and chop up a medium onion, mince the garlic clove and give a small handful of parsley a good, rough chop.

In a medium bowl, combine the chicken and the ricotta. This step wasn’t listed in the recipe directions, but I found it to be much easier to spread the mixture out over the noodles. Plus my husband isn’t a huge fan of big clumps of ricotta, and this solved that.

In a good-sized sauce pot, melt a stick of butter.

Add in the onions and garlic, cook until the onions are soft and translucent. This is my most favorite smell in the entire universe.

Now you can stir in the flour and salt. Keep stirring until it’s nice and bubbly.

Gradually whisk in the broth and the milk and stir constantly for one minute until smooth.

Lastly, add in the 2 cups of mozzarella, 1/2 cup of Parmesan, 1 teaspoon of both dried basil and oregano, then season with 1/2 teaspoon of black pepper. Once stirred and the cheese has melted, immediately remove the sauce from the heat.

Spread 1/3 of the cheesy sauce on the bottom of a lasagna pan or 13×9 baking dish.

Layer 3 noodles over the sauce.

Top with the chicken and ricotta mixture and spread evenly.

Top with three more lasagna noodles.

Drizzle with 1/4 of the remaining sauce and evenly sprinkle with all of the thawed spinach.

Sprinkle with a 1/2 cup of Parmesan cheese, the remaining 2 cups of mozzarella, add the last three lasagna noodles and pour all of the remaining sauce over top.

Sprinkle with the tablespoon or so of chopped parsley and the remaining Parmesan cheese. Bake this in a preheated 350ºF oven for 35-40 minutes.

The lasagna is done when it’s all golden and bubbly. I flicked on the broiler to get some of that cheese crispy and golden, but that’s totally optional. Let the lasagna stand for 5 minutes before cutting and serving.

This time of year, it’s cold and blustery in most parts, so serving lasagna on a winter night with a nice crisp Caesar salad and thick slices of garlic bread is total comfort food to the max. You guys are really going to dig this. And those crispy bits? Amazing!

Creamy, cheesy, belly-pleasy—comfort food at its finest.

Preheat oven to 350ºF. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8-10 minutes. Drain and rinse with cold water.

Meanwhile, melt the butter in a large saucepan over medium heat. Cook the onion and garlic in the butter until tender, stirring frequently. Stir in flour and salt; simmer until bubbly.

Mix in the broth and milk, and boil, stirring constantly, for 1 minute. Stir in 2 cups of mozzarella cheese and 1/2 cup Parmesan. Season with basil, oregano and ground black pepper. Remove from heat and set aside.

Spread 1/3 of the sauce mixture on the bottom of the 9×13 inch baking dish. Layer with 1/3 of the noodles, and all of the ricotta and the chicken. Arrange 1/3 of the noodles over the chicken and layer with 1/4 of the sauce mixture, the spinach, and the remaining 2 cups of mozzarella cheese and 1/2 cup Parmesan cheese.

Arrange remaining noodles over cheese and spread remaining sauce evenly over noodles. Sprinkle with parsley and additional 1/4 cup Parmesan cheese (optional).

Bake for 35 to 40 minutes in the preheated oven. Let stand 5 minutes before cutting and serving.
