Seeded Tomatoes

Can you tell me the correct way to seed a tomato? I've been told to cut the tip off and squeeze the tomato…and all the seeds will come out. I've tried that, and all I was left with was the outside peel. All the good stuff was gone! —M.D., Ballston Spa, New York

To seed a tomato, cut it in half and gently squeeze each tomato half. It sounds like you either applied too much pressure when you were squeezing or the tomatoes were a bit overripe. Seeding a tomato this way not only removes the seeds, but also eliminates some of the juice that can make a dish too watery. If you don't want to lose as much juice, try using a small spoon to scoop out the seeds.
