Yield: 6 Servings 10 15 25 Ingredients 1-1/2 pounds beef top sirloin steak2/3 cup white wine or beef broth1/3 cup soy sauce2 tablespoons vegetable oil1 teaspoon minced fresh gingerroot or 1/4 teaspoon ground ginger1 garlic clove, minced1/2 teaspoon dried tarragon18 small whole onions3 to 4 small zucchini, cut in 1-inch slices2 large sweet red peppers, cut in 1-inch pieces Directions Cut beef in 1-1/4-in. cubes; place in large resealable plastic bag. In a 1-cup measuring cup, combine the wine, soy sauce, oil, ginger, garlic and tarragon; pour 2/3 cup marinade over beef. Seal bag; let stand at room temperature for 45 minutes. Set aside remaining marinade for basting. Drain and discard marinade from beef. Thread the meat, onions, zucchini and peppers alternately on six metal or soaked wooden skewers. Grill over medium-hot heat for 10-12 minutes or until meat reaches desired doneness, turning and basting occasionally with reserved marinade. Yield: 6 servings.

Not only would I make this recipe again...I have made it again several times. I liked the ginger, garlic and tarragon mix. This gives it a little touch of sweetness without making it burn so quickly like any kind of sweet sour sauce does on the grill. Had to use no-salt added beef broth because my DH can't have sodium and I used low sodium soy to help that too.

I love this recipe! I have made it about 5 times this summer. I also omitted the taragon, and I used chicken broth instead because I didn't have beef broth on hand, and it turned out great. I absolutely recommend this recipe!

I made this recipe outside on our grill several weeks ago and it made a hit. I omitted the tarragon. I plan to make it again this weekend.

Tacos, Burritos and Enchiladas: Easy Mashed Potato and Roasted Vegetable Enchiladas

Nov 05, 2008 This was very good! It should be called a Mexican knish. I used 2 leeks, 1 red pepper, 1 green pepper and 3 large cloves of garlic, because my kids don't like the ones named in the recipe. You could use any veggies that you like. I'm glad I read the reviews, because blandness would of been a problem if I didn't add cayenne pepper, chili powder and cumin, along with the salt and pepper stated in the recipe. I sprinkled these seasonings on the veggies before roasting them. I used homemade mashed potatoes. Also, this recipe calls for 8 oz. shredded cheddar, but that is only enough cheese for 8 enchiladas. I would use 12 to 16 oz. of shredded cheddar. There is a lot of prep and mess when making this recipe but it is surely worth it!

Savory Pies: Easy Vegetable Pot Pie

Feb 24, 2004 I used (thawed) frozen Italian veggies and I didn't have thyme, so I used fresh rosemary from my garden. This was my first pot pie and it turned out "very good" according to my fiancee. The bottom crust was still kind of doughy, and I kept it in the oven for about 1 hour, but maybe because of my substitutions. It was so easy and I will surly use it again!

Meatless Main Dishes: Vegetable Medley I

Aug 26, 2003 The vegetable medley was absolutely wonderful. I included red, yellow, and orange peppers as well as a few slices of red onions. The presentation of the dish was pretty, and very tasty. I placed mozzarella cheese on one side of the dish, and Parmesan cheese on the other side, and it was great. The dish had a great taste. My daughter, who is not a vegetable eater, enjoyed the dish very much. I will place this in my recipe repertoire, and will make it many more times to come.

Meatless Main Dishes: Vegetable Filo Pie

Sep 11, 2006 I used broccoli, sweet potato, onion, green beans, zucchini, & red pepper; lightly steamed them, then marinated them in a vinaigrette dressing to add flavor. Added garlic powder & the onion powder to the egg mixture, and made everything else as written. Wonderful way to help me use up phyllo dough; very nice and I would make it again! Thank you, Anne!

Meatless Main Dishes: Summer Vegetable Ratatouille

Oct 12, 2004 If you need a kick of veggies, you can make this a healthy meal in itself!! I used what I had in the house and for veggies only used 1 zucchini, 2 eggplants (I cubed the eggplant then lightly coated with salt and drained in a collander for an hour before cooking), 1 red pepper and substituted 2 cans of drained tomatoes for the fresh. Also added 1 1/2 cups mushrooms too. I also reduced the oil significantly, adding only a splash of oil (and a spray of nonstick cooking spray) each time sauteeing. Didn't have bay leaf or thyme so I used fresh basil and dried oregano and parsley instead. Still turned out divine! Also, be sure to remove the large pot with sauteed onions and garlic from heat until you finish adding all the other veggies (I have a gas range and the onions ended up burning, even on low heat!) Serve with parmesan cheese on top to make it extra nice!

Main Dish Salad: Chicken and Vegetable Pasta Salad

Sep 15, 2003 I *love* this recipe. I tried it out and it was so tasty. I could eat this over and over again. I don't always use olives, and tomatoes seems like it might be overkill, but when cooking the chicken, I use sesame seed oil, rice wine vinegar, and some soy sauce, as well as a bit of powdered ginger for a boost of flavor for the chicken all by itself. This is an excellent recipe.

It’s been 6 months since I quit my job and became a solopreneur. Taking ma’ bizness into my own hands and saying goodbye to an office full of officemates.

Since that time, I’ve often thought about the mornings I’d have to hustle about the house, trying to get it all together to make it to work in time. In time to drive to work, walk over to Whole Foods to get a coffee to go, head into the office, check e-mail, see what’s up on Twitter, check in with co-workers. You know, the mundane routine you do to ease into the work day.

I never used to eat breakfast before I went to work. It wasn’t that it was a running-out-of-time-oh-hell-I’m-going-to-be-late thing, it was mostly that my stomach wasn’t tying itself into knots crying out in pain for food so I figured I could wait a little longer ’til it spoke up. Plus, making breakfast at work as a nice.little.diversion from work.

So after I’d finished my morning office round-about-routine I would make my eggs for breakfast. In the office. “Wow!” you must be thinking to yourself, “you had a full test kitchen at your office. Cool!” Um, no. So I came up with an alternative cooking method…

How I miss the stinky little mini fridge. And the sink. Oh wait, we didn’t have a sink, how quickly I forget I had to clean anything I used in the women’s restroom. And the stove! No, not the stove, silly, I meant the microwave and the cheap little Sunbeam toaster I bought for my mates. Those three little appliances were like the Little Train that could, the Energizer bunny that never stopped and a Timex watche that just kept ticking.

Once upon a time I was a young, naive cook who followed each and every cooking direction as if I was picking up clues to solve a murder on Law & Order. I didn’t deviate from the traditional Cooking Order. At that time I never would have thought to cook eggs anywhere other than on the stovetop. Especially not in the microwave. Ew.

I’m betting you’ve seen those weird egg cookers, the ones on “As Seen On T.V.” and at Bed Bath & Beyond, spouting the incredible powers of cooking the perfect egg in the microwave. To me there seemed to be something philosophically wrong with the concept of cooking my beloved protein package by way of electromagnetic radiation.

Until I made up my own way to do it.

Before I made up the office egg sandwich, most mornings I would make oatmeal with a banana in the microwave. But then I decided I needed more protein. So I started bringing hard boiled eggs to work. But then I would forget to boil the eggs the night before. I needed something I could cook at work. Aha! A carton of egg whites and a couple of recyclable Bamboo bowls. Which led me to the sandwich. The Microwave Egg Sandwich.

Within the time it takes to toast a slice of bread, bagel thin or english muffin, you’ll have hot eggs ready to load onto a veggie filled sandwich. The secret to cooking eggs in the microwave is cooking them for 1 minute 30 seconds. Egg whites puff up pretty high, above the lip of the bowl, but as soon as the time is over, they deflate right away. Your micro might cook hotter, or not, so do a test run first and keep an eye on them to be sure they don’t overflow. Soon enough you’ll know exactly the right measurement for your size bowl.

The sandwiches can really include any favorite ingredient you want to add and whatever you have on hand. I prefer to use egg whites but you could also use whole eggs, they just won’t have as much lift. Sometimes I toss in grated parmesan to the eggs, other times I spread a bit of goat cheese or a wedge of Laughing Cow spreadable cheese on a toasted bagel thin to give it a quick melt. I usually add in fresh spinach but some days I have tomatoes or mushrooms on hand so they jump into the pool too. And there’s always a dose of hot sauce or Cholula to top it all off.

I no longer have an office to make my a.m. sandwich in, which makes my sandwich all the tastier. And while there will always be things I’ll miss about my old work, and hopefully some things they miss about me, I’m pretty sure one thing they DON’T miss is the smell of eggs wafting through the office’s mid-morning air. At my new office my dogs and I don’t mind at all.

Ingredients

1 wedge Laughing Cow Herb & Garlic Cheese Instructions

Toast bagel thin in the toaster or toaster oven. In a small bowl (I used disposable bowls at the office) add egg whites and spinach leaves, season with kosher salt. Place in microwave for 1 minute 30 seconds, keeping an eye on the eggs so they don’t overflow. Smear wedge of cheese on toasted bagel thin and add slices of tomato. Spoon egg out of bowl in a single patty and place on top of cheese and tomato, top with avocado.
