Main Dish Seafood: Lemon-Pepper Salmon

Apr 18, 2007 My husband raved about this recipe; he said it was the best salmon he'd ever eaten! I liked it a lot too. I made just a couple of changes. I used about half of the olive oil and butter the recipe called for; I don't think you need the extra fat. I also used fresh lemon juice and regular pepper instead of the lemon pepper. I sauteed some minced garlic in the butter/oil, then added the salmon (seasoned with salt, pepper, and fresh lemon juice). I also used fresh baby dill instead of cilantro and didn't use as much as the recipe called for, maybe 1/2 cup. The dill gave it a nice, mellow flavor. The salmon came out flaky and light, and none of the flavors were overwhelming. We will definitely be having this again! Let me just add that we had two pieces of fish (about 4-5 oz each). If I were to do this for four pieces, I'd definitely double the sauce; it was just enough for two pieces in the proportions listed.

Steaks and Chops: Salmon with Dill

Aug 15, 2006 I made this with fresh dill (about a ¼ cup or more) and fresh minced sweet onion (Vidalia, ¼ cup), and a lot of lemon, sautéed the butter, dill, onion, lemon quickly first then poured over salmon, served it with a cool cucumber salad and lemon dill rice, everyone was amazed

Main Dish Seafood: Honey Coconut Salmon

Aug 21, 2007 This recipe was absolutely delicious and full of subtle flavor. When I made it, I used coconut milk instead of flaked coconut. However, next time I make it I will lessen the amount of butter to a teaspoon or none at all. The recipe really doesn't need it. Also, I would bake it for 18-20 minutes instead of the listed 25. Salmon still cooks when you take it out of the oven so it came out a little too dry for my taste. Overall, I loved this recipe and you can put in your own personal touch.

Jun 28, 2010 When I told my family I was making Salmon with Peach sauce, the grandkids made faces, but they've tasted it now and the youngest is asking me to make it for his birthday dinner! They all love it. If it rains, you can bake the salmon in foil packets with made-ahead sauce at 375 for 15-20 min. It comes out jucy and delicious, maybe better than on the grill.

Main Dish Seafood: Potato Salmon Patties

Mar 02, 2005 Very good recipe! I actually doubled the recipe, took out all the bones & skin after draining the cans of salmon. I used fresh dill, ritz cracker crumbs, a little old bay seasoning, green onions (only 3 chopped up finely) and I didn't have any potato flakes, so I threw in a couple of handfulls of frozen hash browns, and made large patties (hamburger sized). I fried them in canola oil in my electric skillet until they were good & brown & crispy. They were just delicious! These are great on a hamburger bun with mayo, tomato & lettuce, and I even ate a few of the leftovers for lunch today just with some cucumber ranch dressing and no hamburger bun! Just as good leftover, but not as crispy after warming in the microwave, but just as tastey! Thanks for a great recipe!

Steaks and Chops: Mango Salsa Salmon

Jul 30, 2008 I love salmon and mango together, but this was just okay. My tomato didn't have much flavor, so that may have something to do with it. I prefer my own recipe of salmon with mango puree: salmon fillet breaded in a mix of ground toasted almonds and sesame seeds, then pan fried in olive/sesame oils; topped with a puree of mango, sauteed garlic and red pepper, rice wine vinegar, and a bit of sugar. It's great, if you wish to try it. This one's just a little boring.
