Mar 19, 2008 Outstanding! My dinner guest, a die hard red enchilada sauce fan, was swept away by these enchiladas and proclaimed these her new favorite (me too). Not to mention, I've never known her to eat much and she all but licked the plate clean! Genuine, simple and understated flavors, that all blended together perfectly. Just delicious, and just as written, "decorated" with a plop of sour cream. Can't wait to make this again--and I WILL make this again!—naples34102

Main Dish Casserole Recipes: Chile Rice Casserole
May 07, 2009 I made it a little differently, doubled the recipe and used 3 c cooked rice. I cooked rice until water was absorbed - leaving rice slightly undercooked. Mixed rice with 1 can cr. celery, 1 can cr. chicken (it's what I had on hand), 16 oz sour cream, 7 oz can green chilis, 1 tsp ground cumin, 1/2 tsp garlic powder, and 1/2 tsp garlic salt. The whole family ate it up, even my 17 month old! Thanks for sharing!—Mom of 3
