Pesto Recipes: Pesto Lasagna

Nov 29, 2010 Yum! Great combonation of flavors. Made "lasagna roll-ups" instead of a pan of lasagna. Easier to make lasagna for two. Nixed the onion and spinach. Baked chicken breasts in oven smeared with pesto. Chopped. Used half ricotta half cottage cheese. Layered noodle, alfredo sauce, ricotta/cottage mixture, chicken, more pesto, sprinkle cheese, black pepper, roll up, top with more alfredo sauce, mozz & parm.

Pesto Recipes: Pesto Cream Sauce

Oct 30, 2008 Delicious! I didn't have any shrimp or mushrooms, so I made the pasta with just the cream sauce, and it turned out wonderfully. The only thing I did change is that I added an extra tablespoon of flower. After mixing in the Pesto, I felt that the sauce was still too thin, and I didn't think it would stick well to the pasta. After I added the flower, I let it simmer for an extra 5 minutes and it was perfect. Adding the pasta helped too because the starch from the pasta made it a bit less liquidy as well. Great recipe!

Pesto Recipes: Ziti with Tomato-Pesto Sauce

Mar 27, 2007 It never occured to me to add pesto sauce to plain old spaghetti sauce - the results are wonderful. Though you can't really taste the pesto, it really adds another layer flavor. I did change a few things. First, I browned and crumbled some sweet Italian sausage, then added some fresh mushrooms. Once that was all cooked, I add two cans of plain spaghetti sauce and almost a whole container of pesto. Once the pasta was cooked, I threw it all in a casserole, topped with cheese and baked for 20 minutes or so. My husband doesn't usually comment on pasta dishes - this one he did, repeatedly!

Pesto Recipes: Pesto Pasta with Chicken

Feb 24, 2006 I made this recipe last night, and both my husband and I really enjoyed it. As others, I made a few changes - I used the oil from the sundried tomatoes, and I know I used more than 1 teaspoon, more like a couple of tablespoons - next time, I think I will saute in some chicken broth to cut the fat . I also added some slice crimini mushrooms, some sliced roasted red peppers, more sundried tomatoes, and a sprinkle of parmesan. After the chicken and mushrooms were cooked, I tossed in the sundried tomatoes and red peppers, then tossed in the cooked whole wheat rotini pasta and the pesto, while keeping the pan on low. Tossing in a bowl would have been nicer presentation, but it was just the two of us, so I had one less bowl to wash. I have never been a pesto fan, but I liked this. It was not the best, as in 5 stars, but real close, It was relatively quick and easy to make and I will definitely make it again.

Pesto Recipes: Fabulous Cilantro Pesto

Mar 27, 2006 This may be deserving of a five, but only after some changes are made....what's up w/ the vinegar, walnuts, and cayenne?! Hubby loves cilantro, and so I remade it and I chose to change the recipe. I used 2 cups cilantro, 1/4 cup of roasted pinenuts, 1/4 cup of parmesan cheese, 2 tsp of salt, 2 tsp of black pepper, 1 tsp minced garlic, and 6 Tbsp olive oil. All I can say is wow...what a kick!!! Much better!!

Pesto Recipes: Pesto Pasta with Green Beans and Potatoes

Mar 09, 2009 I love this website and use it a lot. I've been irritated more than once when there is a long string of people who have rated a recipe really high and then someone gives it a one star - I just don't see how that can happen. You should have a sense of what you're getting when you try a recipe and if it has things about it which you know you don't care for (eg, it's spicy and you like bland)- then don't bother cause you're going in with a negative attitude. Well, this is a long way of saying I reallllly did not care for this recipe - and I don't know why. It is adventuresome - interesting mix of ingredients, all of which I like individually. Partly I think it was the potatoes - their texture was weird with all the other ingredients. I used frozen green beans and I added some chunks of white chicken meat - other than that, followed exactly as written. This just did not work for me.

Pesto Recipes: Pesto Chicken Florentine

Dec 03, 2003 This was just ok, but I think with a little tweaking it would be good. First, olive oil on medium-high heat is enough to completely blacken minced garlic-- as I found out quickly enough. Second, one should absolutely add as much spinach as one can get one's hands on-- the amount called for in the recipe, once wilted, is next to none, especially for those like me who find the spinach the most appetizing part of the recipe to begin with. And, make sure your pesto is very fresh-- mine wasn't and therefore did not add the lovely pungent flavor I was expecting. Otherwise, preparation was relatively easy and straightforward, and the number of ingredients few enough that I will try it again, hopefully with a better end result. Thanks for posting!

Better-Than-Basic (but Just as Easy) Walnut Pesto

Until my late teens, I incorrectly assumed that classic pesto got its backbone from walnuts. This notion came from years spent as a small child helping my step-grandmother, Grenelle, blitz up batch after batch. Every Summer she'd harvest her backyard basil crop, and we'd spend afternoons tucking away containers of walnut-studded pesto in her basement freezer to enjoy year-round. Most (if not all) was enjoyed simply - with a platter of saltine crackers, ham, and cheese - though throughout my youth, I shunned pesto for its pungent odor and suspect color.

Years later, after I realized the error of my ways, I dived into a passionate love affair with all things pesto. I called Grenelle for her recipe, remembering the pesto's legion of household fans. I scribbled down the recipe on scrap paper, where it lived for many years, splattered with olive oil. Then one day, while flipping through a tattered copy of the Silver Palate Cookbook, I learned her secret.

She may not have invented this recipe, but today I still consider it Grenelle's pesto. Though pine nuts star in the classic Genovese version, to this day I prefer pesto made with walnuts, as the delicate flavor of pine nuts can get lost amongst the assertiveness of parmesan and raw garlic. Chances are, this version will make you a walnut pesto convert.

Pesto Recipes: Italian Chicken with Pesto Potatoes

Sep 13, 2007 This was really, really good. To the balsamic vinegar I added about a tablespoon of brown sugar, some minced garlic, some dijon mustard and a splash of hot sauce, just to give it some complexity. When I stuffed the chicken with the cheese, I added a schmear of minced garlic and one basil leaf for extra flavor. Before putting the chicken and tomatoes (which were wonderful, BTW) in the oven, I drizzled a little of the finished balsamic sauce and sprinkled a touch of mozzarella over the top. The recipe didn't say whether to cook the chicken covered or uncovered, so I covered it for the first 15 minutes, then removed the cover. The potatoes were terrific too. I had picked up some really tiny potatoes (about the size of large marbles) and they worked perfectly for this dish. Bottled pesto sauce was pretty expensive at the store, so I made my own. The combination of the sharp snap of the potato skins when I bit into them mixed with the great garlicky pesto was just lovely. This dish made an enticing presentation and is certainly company worthy. DH and I both loved this dish. I can't say enough good things about it. Thanks, Paula

Pesto Recipes: Phenomenal Chicken and Pasta in Creamy Pesto Sauce

Sep 24, 2007 Really, really good. It makes a ton--at least 6 GIANT servings. I followed the recipe, except I used a heaping teaspoon of chicken base paste (like bouillon, from Sam's) instead of broth or water. I then added sauteed mushrooms at the end (after tasting), and I really loved the addition. I don't know how thick the sauce is supposed to be, but it was a bit thin, easily swiped up with crusty bread. I'd bet slightly underdoing the pasta, and then cooking it a while in the sauce, would thicken it by soaking into the pasta. Last but not least, I had to use a big pot, NOT a skillet. I'm surprised no one else commented on this. Anyway, YUM!!

Apr 15, 2007 This pizza was so good! My brother loved it, and ate slice after slice. The only change I made was related to the cheese. I've never used fontina cheese, and all I had at home was an Italian blend of mozzerela and romano. I used way more than an 1/2 cup, and it was very good. I always figure, the more cheese, the better!

Pesto Recipes: Teena's Spicy Pesto Chicken and Pasta

Aug 08, 2008 Wow, LAGIRL, you have really outdone yourself! This dish is incredible! The only changes are I used spiral pasta, and romano cheese instead of parmesan. By the way, for those of you who substitute chili powder, it's not quite the same as the paste (though if you don't have/can't find the paste, it should work). It's thick and spicy, and really enhances the flavor for the chicken. I found mine in the produce section of Ultra Foods (I would assume it'd be in the same place as other major grocery stores. I had never heard of chili paste before until I accidentally stumbled upon it and realized what it was.) They are in squeeze tubes, near the fresh herbs. Look for it, because the paste makes all the difference! Wonderful, wonderful recipe! Hands down, a keeper!

Pesto Recipes: Chicken Pesto a la Lisa

Oct 29, 2003 Of all the recipes that I've tried on allrecipes.com, this one has to rate as the tastiest. The pesto flavor comes out well but is not overpowering. I put the feta cheese on a little too early, but that just added to the tanginess of the sauce. I highly recommend this. Thanks, Lisa!!
