Roasts: Jenn's Stuffed Pork Roast and Veggies
Nov 02, 2010 I used a 2 lb. boneless pork roast and cut huge slits in it about 1 inch apart. I didn't have dried pineapple on hand, so I used raisins, which worked out well. I had a huge container of fresh spinach from Sam's Club, so I stuffed as much spinach as possible in each of the slits, along with the raisins from a snack size raisin box. Take note that the recipe contains no liquid. I added about 1/4 C of water to the roaster, but that wasn't enough. Two hours later I returned from running errands to find the smell of something burning. The vegetables were burned black and had to be discarded. However, the roast survived and tasted great. Be sure to add some sort of liquid, probably 1 cup would have done it, to the roaster of pork and vegetables in the oven- water/wine/broth/juice, etc. Perhaps sliced apples roasting with the pork roast would also be good. Great recipe, just needs some tweaking.—Jan

Meatless Main Dishes: Campfire Veggies
Jun 10, 2008 I halved this recipe, used diced red potatoes, vidalia onions, frozen corn and peas, used EVOO in place of butter. Since we grilled this packet on a charcoal fire I triple wrapped the foil, made sure all the veggies were flat in the foil and not heaped up and made sure to dice the potatoes very small. Will definitely make this again this summer and add fresh herbs next time. —GodivaGirl

5 Lesser-Known Spring Veggies and What to Make With Them
We're looking forward to the beginning of Spring, when exotic produce is aplenty at farmers markets everywhere. But don't get too used to it: these pretty green things are still shockingly fleeting, and in just a few weeks, you won't be able to locate the likes of lesser-known specimens, like Spring onions, fava beans, and freshly foraged morels. Here are five more foods you'll want to track down before the season's over, plus our best recipes for them.

Lamb With Sauteed Veggies
Ruth likes to serve this streamlined supper at family functions. "My parents raised sheep for more than 30 years, so I have several lamb recipes," she shares. "Not only are these chops tender, but they cook quickly." While the lamb broils, Ruth sautes red pepper and zucchini to accompany it. "People always comment on this great combination," she assures.

Stir-Fry: Stir Fried Pasta with Veggies
Apr 23, 2011 My husband and I make this often. We use julienned carrots, celery, mushrooms, and cabbage. We slice the chicken into very thin strips. Very good meal. Always satisfies my Chinese food craving!—MichaeleM

Main Dish Casserole Recipes: Kielbasa and Veggies
Oct 28, 2010 This is delicious! Like other readers, I used turkey sausage (I like Hillshire Smoked Turkey Sausage, it's peppery) and a bag of frozen spring vegetables (peppers, squash, asparagus, etc). My DH and I love onions, so I went ahead and browned the turkey sausage and onions in a skillet first. I diced 4 small red potatoes, only used 2 tbsp butter and sprinkled Mrs Dash on top. Didn't have any cheddar cheese, but had about 1 cup of colby/jack. Thank you for a great dinner recipe!!—momcat63
