Meatless Main Dishes: Spinach, Red Lentil, and Bean Curry

Nov 28, 2006 I am a vegetarian, and I also don't do much dairy, so I am always looking for recipes full of fresh, colorful foods. For this one, I used silken tofu instead of yogurt, added a little lime, and used dry beans (soaked and cooked). I left out the chopped tomatoes. I also thought that there was a little something missing, so I added a bit of cayenne and salt and here was the trick: brown sugar. I am not sure how much I added (around 2 tbsp) so I would just play with it until it tasted good. Another thought, instead of the brown sugar, might be golden raisins. Once I added the brown sugar, it was DELICIOUS.

Main Dish Casserole Recipes: Lentil Rice and Veggie Bake

Feb 19, 2005 This was good, but nothing spectacular. I cooked the rice and lentils in the same pot, and instead of sprinkling the second half of the spices over top, I mixed them into the remaining tomato sauce. Instead of a fresh tomato, I used half a can of petite diced tomatoes. This has a great combination of vegetables, but I think it could benefit from a little extra tomato sauce on top, or perhaps some cayenne pepper in with the spices. Still, I thought this was pretty good, very healthy and I'll probably make it again.

Meatless Main Dishes: Lentil Cakes (Patties)

Sep 27, 2011 As a healthnut, I'm rating this very high because I've changed it to be 'very-Healthy.' I try to include ingredients that provide the most-nutritional benefit, cut calories and fat, and include good fats and flavor. This is my healthy version of this recipe: The first [4] ingredients stay the same. I used 1/2 cup oatmeal, 2 egg whites, 1 chopped RED onion, 1/2 cup shredded Reduced-FAT Pepper Jack cheese (optional), 4 oz Vanilla Greek yogurt (Chobani), 1/2 tsp of each: oregano, cumin, garlic pwdr, & Cayenne Pepper, and 2 tblsp. olive or canola oil... I cooked the lentils in water first. Then, drained and added them to everything else. (I don't like my veggies mushy, so I DON'T saute them before forming patties). Shaped into patties, and baked @ 375 for 12 to 15 minutes.
