Yield: 4 Servings 5 70 75 Ingredients 1 can (12 ounces) diet cola1/2 cup ketchup2 to 4 tablespoons finely chopped onion1/4 teaspoon dried oregano1/4 teaspoon garlic powder8 bone-in chicken thighs, skin removed Directions In a large skillet, combine first five ingredients. Bring to a boil; boil for 1 minute. Add chicken; stir to coat. Reduce heat to medium; cover and simmer for 20 minutes. Uncover; simmer for 45 minutes or until a meat thermometer reads 180°. Yield: 4 servings.

Nutritional Facts 1 serving (2 each) equals 234 calories, 10 g fat (3 g saturated fat), 92 mg cholesterol, 434 mg sodium, 9 g carbohydrate, 1 g fiber, 26 g protein.

Tip Chopped Onion Substitute

When there’s no time to chop onions, onion powder is one option. Substitute 1 tablespoon of onion powder for one medium chopped onion. For the best onion flavor, use frozen chopped onions or dried minced onion (found in the spice aisle). One tablespoon of dried minced onion equals 1/4 cup minced raw onion.

Can you use regular cola in this recipe? I am allergic to aspartame. Also, aspartame should not be used in recipes which are heated or baked.

I like this better than barbeque chicken. It's so easy and tastes deliciously different. Plus I always have these ingredients on hand, so it's a fabulous go-to. Try it!

Don't know what happened but the chicken was chewy. Had a good flavor but probably won't make it again. Will take the leftovers and pressure cook them then shred add cheese and make a wrap.
