Quiche Recipes: Vidalia Onion Tart

Dec 29, 2003 This was a big hit at Christmas Eve dinner this year - I served a small slice on a pool of Bechamel sauce (http://pasta.allrecipes.com/az/BechamelSauce.asp), with some cheddar cheese thrown in for color, as a first course. It was well-received and made good leftovers, too. In the interest of time, I used a frozen deep-dish pie shell (Pet-Ritz), and I found that I had about 1/2 to 3/4c. too much filling after filling the shell to the brim. Although the recipe is vague, the only leek soup mix packets I could find in the supermarket were by Knorr, so that is what I used.

Burgers: Onion and Cheddar Burgers

Mar 05, 2004 These were "okay". I was out of Worcestershire, and didn't realize it until I started making these, so that got left out. And I didn't broil them, because I was practicing for our campout, so I cooked them in a dutch oven. They fell apart, so we just ate them like loose meat, instead of burgers. I don't know if I will make these again or not -- they weren't as flavorful as I thought they would be -- but maybe it is because I didn't have the Worcestershire sauce. A toss-up, I guess - but a nice change from just plain ole hamburgers.

Steaks and Chops: Easy Caramelized Onion Pork Chops

Feb 12, 2004 This was very good!!! My boyfriend is not a big fan of pork chops but he loved this. I browned the chops first, removed them from the pan, added the onions and a teaspoon of sugar. I carmalized the onions than added back the chops and used 1 cup of beef broth in place of the water. Excellent, will make again and again.

Quiche Recipes: Onion Quiche

Jan 29, 2008 I wasn't expecting much from this recipe, but I happened to have most of the ingredients on hand and wanted to use them up. I was pleasantly surprised, this turned out fantastic! Based on the other reviews, I did use the equivalent of 4 eggs (actually, 1 cup of Better N Eggs to lower the fat content) and 3/4 cup reduced fat Swiss cheese. I also cooked 5 strips of Morningstar 'fakin' bacon' and crumbled that up and sprinkled it on top of the onions, which I layered in a whole wheat frozen pie crust (pre-baked for 10 minutes at 450 since I like a crisp crust). Then I poured the egg and cheese mixture over the onions and 'bacon' and baked the whole thing until the top was slightly browned. It turned out delicious, such a versatile recipe. You could add almost any kind of meat or even use fake meat as I did. I do think it wouldn't be nearly as good with just the onions and cheese but would be more like an omelette in a crust. The savoriness of the 'bacon' really made this special. And it's so easy, I always thought quiche was difficult but I whipped this up in just a few minutes! Definitely a keeper.

Burgers: Teriyaki Onion Burgers

May 29, 2007 I added fresh minced garlic to the meat/teriyaki mixture and let it mainade in the fridge for at least two hours before adding the french fried onions, and making the patties. Also, my local market has a teriyaki/wasabi mainade, it is made by ESSENSIA, and carried by Albertsons. It adds a nice kick above the standard teriyaki. Durring BBq'ing, I glazed the patties with the extra teriyaki/wasabi, and opted for sharp cheaddar cheese, these modifications with the bolder flavors took this burger over the top. while the burgers were finishing up cooking I grilled up some pineapple rings I had basted in hot vietnameese fry sauce, but you can just as easily baste them in a vegtable oil/grill spice blend, it really adds a beautiful sweet/spicy topper for the finnished burgers!

Pizza: Caramelized Onion and Gorgonzola Pizza

Nov 10, 2003 This receipe is awesome! I love the contrast between the flavorful gorgonzola, and sweet carmelized onions! Every time I make it, people rave like you wouldn't believe! No offense to the person who mentioned that they would use a Boboli crust, but yuck! And feta cheese, while delicious, would not be good with carmelized onions, at least in my opinion. I would recommend to anyone who hasn't made this yet, stick to the recipe!

Roasts: Onion Elk Roast Stroganoff

Nov 18, 2010 This was delicious, of course I had to make substitutions for what I had on hand... I used elk stew meat instead of roast, which turned out so tender! and I didnt have cream of onion soup so I used cream of mushroom and added extra onion. I was in a hurry and accidently added sour cream in the beginning,but it still turned out. I also threw in some mushrooms for fun. My husband added some johnnys seasoning when my back was turned, and although it did make it taste better, the recipe was fine without it.I will definitely use this recipe again, maybe next time without the substitutions!

Oh boy. I’m bonkers excited about these sandwiches, ya’ll.

When I first saw Joy post them I thought: That needs to happen in my kitchen. I mean, two whole onions reduced to caramely goodness and paired with melty cheese? Count me in.

Then, when Erika mentioned that Laurie had shared the recipe here on Tasty Kitchen, I knew I had to make if for ya’ll. It was a totally non-selfish decision.

Here’s what you’ll need to make these fancy grilled cheese sandwiches: butter (of course), olive oil, onions, salt and pepper, sugar, thyme (fresh or dried), beer or white wine (or beef stock if you’re not one for using alcohol), bread and Gruyere cheese.

Now it’s time to assemble and cook your sandwiches!

Preheat a large skillet over medium to medium-high heat. Butter four slices of bread on one side. Place a slice on the skillet, buttered side down. Sprinkle on a bit of the shredded cheese. Top with half of the onions and more cheese.

French onion soup in grilled cheese form. This is what heaven tastes like!

In a large skillet over medium heat, melt the butter and olive oil together. Add in the onions and stir so they are coated in all the fat. Cook undisturbed for 5 minutes.

Stir and add in the salt, pepper, sugar and thyme. Stir, cover the pan with a lid and let cook. Stir occasionally until the onions are soft and deep golden in color. Reduce the heat if you notice the onions are browning too soon.

Add in the beer, scrape any bits that accumulated on the bottom of the skillet, and then remove them off the heat.

On a preheated griddle or large skillet, place a slice of buttered bread (butter-side down) and top it with a little shredded smoked Gruyere. Add half of the onion mixture and then more of the cheese. Top with a second slice of buttered bread (butter-side up).

Flip when the bottom is crispy and golden; repeat on second side.

Cut in half and serve.

Pork Stir Fry with Green Onion

Don’t you love a good stir-fry? Years ago I had this big wok with wooden handles, well seasoned, in spite of a housemate’s attempt one day to scour off all of the pan’s beautiful black seasoning I had worked so hard to create. I don’t know what eventually became of that wok; these days I’m loving my friend Jaden’s non-stick enamel cast iron wok. It does a great job with high heat, it’s stick-free and I don’t have to worry about it rusting. The good thing about stir-fries is that you don’t need a lot of fancy ingredients to have a perfectly presentable dish. All you need is a pan and a cooking oil that can take high heat. Woks work well for this, as do large pans of cast iron or hard anodized aluminum.

The following stir-fried pork recipe couldn’t be easier. All you need is lean pork, some green onions, and garlic. You marinate thin strips of pork first in a mixture of soy sauce, a little sugar, and corn starch. The corn starch marinade is a useful trick to help keep the pork from drying out when it gets cooked on that high heat. The sugar is just enough to create some caramelization for added flavor. Consider this recipe a base for experimentation, though it is satisfying enough, unadorned. You could easily add some chile to the hot oil, or ginger, red bell pepper, mushrooms, or water chestnuts to the pork. Sprinkle on some fresh cilantro or toasted sesame seeds for a garnish too if you would like. The base recipe is adapted from one in The Cultural Revolution Cookbook by Sasha Gong and Scott Seligman.

You can substitute the green onions with Chinese chives (much thicker than regular chives), if available. If you want to spice this up a bit, add some chile pepper flakes to the hot oil with the garlic, and/or add some minced fresh ginger with the pork.

1 pound pork loin or boneless pork chops2 Tbsp soy sauce1 teaspoon sugar1 teaspoon corn starch4 Tbsp peanut oil or other high smoke point oil (canola, rice bran, or grape seed)5 cloves garlic, thinly sliced8-12 scallions/green onions, sliced diagonally into 1 to 2-inch pieces, green and white parts included1/2 teaspoon sesame oil (optional)

1 Pork chops tend to come in thicknesses either around 1/2 inch thick or an inch thick. If you are working with a thick boneless pork chop, start by slicing it into two thin layers, horizontally.  If starting with pork loin, cut slices 1/2 inch thick.  Put the slices under some plastic wrap or wax paper and pound them thin with a rubber mallet, meat mallet or even an empty wine bottle. This will help tenderize the meat. The slices should be about 1/4 inch thick. Cut the pork against the grain into thin strips, about 1 1/2 inches long.

2 Put the soy sauce, sugar, and corn starch into a large bowl and whisk to combine.  Add the pork strips to the bowl with the marinade and toss to coat completely. Set aside for at least 10 minutes.

3 Heat the peanut oil in a wok or large sauté pan on high heat. When the oil is hot (shimmering but not smoking) add the garlic slices and stir-fry until they begin to turn brown at the edges, about 30 seconds. Add the pork strips and stir-fry until the pork changes color, about 90 seconds, stirring constantly.

4 Add the sliced green onions and continue to stir-fry for another minute, or until the green onions wilt. Turn off the heat and stir in the sesame oil, if using.

Serve immediately. Serve alone, or with rice.

Yield: Serves 4.

Roasted Butternut Squash, Radicchio, and Onion

Here’s a wintery, festive side dish for your holiday table—cubes of butternut squash, along with wedges of radicchio and onion, tossed with salt and olive oil, and roasted in a hot oven until caramelized, then tossed again with toasted pine nuts, balsamic vinegar, parsley, and shredded Parmesan cheese. Wow. My tummy does a happy dance just thinking about making and eating this again. Radicchio is naturally a little bitter, but it loves being grilled or roasted, and it has a special affinity for balsamic vinegar and Parmesan cheese (see our grilled radicchio salad recipe). Combine those ingredients with the sweetness and substance of butternut squash and onions, and now your palate is firing on all levels – sweet, sour, salty, bitter, and umami. Great alongside roast beef or prime rib, or as a vegetarian meal in and of itself.

1 medium butternut squash (about 2 pounds), peeled and cut into chunks1 large onion, peeled and cut into wedges through the root1 head radicchio, cut into wedges through the rootOlive oilSalt and black pepper1/2 cup pine nuts1/4 cup chopped parsleyGrated parmesan or pecorino cheese to taste, about 1/4 cup to 1/3 cupBalsamic vinegar to taste, about a tablespoon

1 Preheat the oven to 400°F. Toss the squash chunks, onion and radicchio wedges in olive oil and salt them well. Arrange in one layer on baking sheets (you may need two) and put in the oven.  Roast the vegetables until their edges are nicely caramelized, turning the radicchio and onion wedges over about halfway through the roasting. The radicchio, onion, and squash will roast at different speeds. So periodically you'll have to remove the finished vegetables and let the others remain in the oven to finish roasting. As a guideline, roast the radicchio for about 25 minutes, turning halfway. Roast the onions about 35 minutes, again, turning halfway. Roast the squash pieces for 45 minutes, but do not turn. In all cases do not remove from the oven until you see browning on the edges.

2 While the vegetables are roasting, toast the pine nuts.  Heat a small pan on medium high heat.  Add the pine nuts in a single layer. Cook until lightly toasted. Remove from heat to a bowl to keep the nuts from burning.

3 Once all the vegetables are cool enough to handle, roughly chop the radicchio and onion into manageable pieces. Place the radicchio, onion, and butternut squash in a large serving bowl. Add the pine nuts and parsley. Add black pepper to taste.  Drizzle with balsamic vinegar. Stir gently to combine, taking care not to squish the soft roasted squash.

To serve, sprinkle with some grated Parmesan or pecorino cheese.

Yield: Serves 6-8 as a side dish.
